- 1 tsp cumin
- Salt and pepper to taste
- 1 cup hummus
- 2 cucumbers, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
- 1 tbsp olive oil
- Cooked quinoa or rice for serving
Instructions
1. Prepare the Crust:
- In a bowl, combine chicken strips with olive oil, minced garlic, paprika, cayenne, cumin, salt, and pepper. Marinate for 10 minutes.
- Heat a skillet over medium-high heat. Cook the chicken for 6-8 minutes, until cooked through and slightly charred.
- In another bowl, mix diced cucumbers, red onion, parsley, lemon juice, and olive oil to make the cucumber salad.
- To assemble, spread a layer of hummus in each bowl, top with cooked quinoa or rice, then the spicy garlic chicken, and finish with the cucumber salad.
