A light and airy carrot mousse that captures the golden essence of carrots, enhanced with warm toasted spices and a crunchy hazelnut topping.

For the Crust:
- 4 large carrots, peeled and chopped
- 1 cup heavy cream
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/2 cup toasted hazelnuts, chopped
- 1 packet unflavored gelatin
- 1/4 cup cold water
- 1 tsp vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- Steam the chopped carrots until tender, then blend into a smooth puree.
- Soften gelatin in cold water, then dissolve over low heat and mix into carrot puree.
- Whip heavy cream with sugar, vanilla, and spices until soft peaks form.
- Gently fold carrot mixture into whipped cream until fully combined.
- Spoon mousse into serving glasses and chill for at least 2 hours.
- Top with toasted hazelnuts before serving.
