For the Crust:
- 4 boneless, skinless chicken breasts
- 8 slices bacon, cooked until crisp
- 1 cup sliced mushrooms
- 1 cup shredded Colby Jack cheese
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
- In a small bowl, mix honey, Dijon mustard, and mayonnaise to create the sauce. Spread half of the sauce evenly over the chicken breasts.
- Top each chicken breast with sliced mushrooms, followed by two slices of crispy bacon. Spoon the remaining sauce over the bacon.
- Sprinkle shredded Colby Jack cheese over each chicken breast. Transfer the skillet to the preheated oven and bake for 15-20 minutes, until chicken is cooked through and cheese is melted and bubbly.
- Garnish with fresh parsley if desired and serve hot with your favorite sides.
