For the Crust:
- 1 sheet puff pastry, thawed
- 1 medium apple (such as Honeycrisp or Granny Smith), thinly sliced
- 4 oz brie cheese, rind removed and cut into small cubes
- 2 tbsp honey
- 1 tsp fresh thyme leaves
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry sheet on a lightly floured surface and cut into 2-inch squares. Place squares on the prepared baking sheet.
- Top each pastry square with a slice of apple and a cube of brie. Drizzle lightly with honey and sprinkle with thyme, salt, and pepper.
- Brush the edges of the pastry squares with the beaten egg wash. Bake for 12-15 minutes, or until the pastry is golden brown and puffed.
- Remove from oven, let cool slightly, and serve warm.
