Apple and Brie Stuffed Chicken Breast

Description

Tender chicken breasts stuffed with sweet apples and creamy brie, pan-seared to golden perfection and finished in the oven for a gourmet weeknight dinner.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 medium apple, peeled and finely diced
  • 4 oz brie cheese, rind removed and cubed
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • Salt and black pepper to taste
  • 1/2 cup chicken broth

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Using a sharp knife, cut a deep pocket into the side of each chicken breast, being careful not to cut all the way through.
  2. In a small bowl, mix together the diced apple, brie cubes, and thyme. Season with a pinch of salt and pepper.
  3. Stuff each chicken breast with the apple and brie mixture, then secure the opening with toothpicks. Season the outside of the chicken with salt and pepper.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear for 3-4 minutes per side, until golden brown.
  5. Pour chicken broth into the skillet, then transfer to the preheated oven. Bake for 18-20 minutes, or until chicken is cooked through (internal temperature 165°F/74°C).
  6. Remove toothpicks, let rest for 5 minutes, then serve drizzled with pan juices.

You can customize the seasonings to taste.
