For the Crust:
- 4 large flour tortillas
- 8 oz brie cheese, sliced
- 1 medium apple, thinly sliced
- 1/4 cup dried cranberries
- 2 tbsp butter, softened
- 1/4 cup honey
- 1/2 tsp red pepper flakes
- Fresh thyme for garnish (optional)
Instructions
1. Prepare the Crust:
- In a small saucepan, warm the honey and red pepper flakes over low heat for 5 minutes to infuse, then set aside.
- Lay out two tortillas. Layer brie slices, apple slices, and dried cranberries evenly on each, then top with the remaining tortillas.
- Heat a skillet over medium heat. Spread butter on one side of each quesadilla and place butter-side down in the skillet. Cook for 3-4 minutes until golden brown.
- Butter the top side, flip, and cook for another 3-4 minutes until the cheese is melted and the tortilla is crispy. Repeat with the second quesadilla.
- Remove from skillet, cut into wedges, drizzle with the hot honey, and garnish with fresh thyme if desired. Serve immediately.
