For the Crust:
- 1 cup whole wheat flour
- 1/2 cup vanilla protein powder
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup
- 1/4 cup almond milk
- 1 large egg
- 1 tsp vanilla extract
- 1 cup finely chopped apple
- 1/4 cup chopped walnuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, protein powder, baking soda, ginger, cinnamon, nutmeg, and cloves.
- In another bowl, mix applesauce, maple syrup, almond milk, egg, and vanilla until smooth.
- Combine wet and dry ingredients, then fold in chopped apple and walnuts (if using).
- Divide batter evenly into muffin cups and bake for 20-25 minutes, or until a toothpick comes out clean.
- Let cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
