For the Crust:
- 1 lb boneless, skinless chicken breast, thinly sliced
- 2 bell peppers (any color), sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- 2 cups cooked white rice
- Green onions, sliced for garnish
- Sesame seeds for garnish
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil. Set aside.
- Heat vegetable oil in a large skillet or wok over high heat. Add chicken and stir-fry until cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add bell peppers and onion. Stir-fry for 3-4 minutes until slightly tender. Add garlic and ginger, cook for 1 minute until fragrant.
- Return chicken to the skillet. Pour the sauce over and toss everything together. Cook for 2-3 minutes until heated through and sauce thickens slightly.
- Serve the stir-fry over cooked rice. Garnish with green onions and sesame seeds.
