Description

A quick and flavorful stir-fry featuring tender chicken, crisp bell peppers, and a savory-sweet sauce, served over steamed rice for a satisfying meal.

For the Crust:

  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 2 bell peppers (any color), sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 2 cups cooked white rice
  • Green onions, sliced for garnish
  • Sesame seeds for garnish

Instructions

1. Prepare the Crust:

  1. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil. Set aside.
  2. Heat vegetable oil in a large skillet or wok over high heat. Add chicken and stir-fry until cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add bell peppers and onion. Stir-fry for 3-4 minutes until slightly tender. Add garlic and ginger, cook for 1 minute until fragrant.
  4. Return chicken to the skillet. Pour the sauce over and toss everything together. Cook for 2-3 minutes until heated through and sauce thickens slightly.
  5. Serve the stir-fry over cooked rice. Garnish with green onions and sesame seeds.

Notes

You can customize the seasonings to taste.
