For the Crust:
- 2 large potatoes, thinly sliced
- 2 large sweet potatoes, thinly sliced
- 1 cup heavy cream
- 1 cup grated Gruyere cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp fresh thyme leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp unsalted butter, softened
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a springform pan with butter.
- In a bowl, mix heavy cream, minced garlic, thyme, salt, and pepper.
- Layer potato and sweet potato slices alternately in the pan, brushing each layer with the cream mixture and sprinkling with cheeses.
- Repeat layers until all ingredients are used, finishing with a cheese layer on top.
- Cover with foil and bake for 45 minutes. Remove foil and bake for another 15 minutes until golden and bubbly.
- Let rest for 10 minutes before carefully removing the springform ring. Slice and serve.
