For the Crust:
- 8 oz cream cheese, softened
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup chopped sun-dried tomatoes in oil
- 1/4 cup chopped kalamata olives
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh parsley
- 1 clove garlic, minced
- 1/4 cup chopped toasted macadamia nuts
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a medium bowl, combine cream cheese, cheddar cheese, sun-dried tomatoes, olives, basil, parsley, and minced garlic. Mix until well blended.
- Season the mixture with salt and pepper to taste. Shape the mixture into a log on a sheet of plastic wrap.
- Roll the cheese log in the chopped toasted macadamia nuts, pressing gently to adhere. Wrap tightly in plastic wrap and refrigerate for at least 1 hour to firm up.
- Serve chilled with crackers, sliced baguette, or vegetable sticks.
