A traditional Greek savory pie made with layers of flaky phyllo dough, filled with a rich mixture of spinach, feta cheese, and fresh herbs.

For the Crust:
- 1 lb fresh spinach, washed and chopped
- 1 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 1/2 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 2 large eggs, lightly beaten
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
- 1 package phyllo dough, thawed
- 1/2 cup melted butter
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
- In a large bowl, combine spinach, feta, ricotta, dill, parsley, green onions, eggs, olive oil, salt, pepper, and nutmeg. Mix well.
- Layer half of the phyllo sheets in the baking dish, brushing each sheet with melted butter. Spread the spinach mixture evenly over the phyllo.
- Top with remaining phyllo sheets, brushing each with butter. Tuck in any overhanging edges.
- Score the top into squares or diamonds. Bake for 30-35 minutes, until golden brown and crisp. Let cool slightly before serving.
