A creamy, protein-packed egg salad made with ripe avocado instead of mayonnaise, and brightened with sweet cherry tomatoes.

For the Crust:
- 4 large hard-boiled eggs, peeled and chopped
- 1 ripe avocado, pitted and mashed
- 1 cup cherry tomatoes, halved
- 2 tablespoons fresh lemon juice
- 1/4 cup red onion, finely diced
- 1 tablespoon fresh dill, chopped
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a medium bowl, mash the avocado with lemon juice until smooth.
- Add chopped hard-boiled eggs, cherry tomatoes, red onion, and dill to the bowl.
- Gently mix all ingredients until well combined.
- Season with salt and black pepper to taste.
- Serve immediately on toast, crackers, or lettuce leaves.
