For the Crust:
- 1 cup graham cracker crumbs
- 3 tablespoons melted butter
- 2 ripe avocados, pitted and peeled
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar
- 1/4 cup water
- Extra lime zest for crystallizing
Instructions
1. Prepare the Crust:
- Mix graham cracker crumbs with melted butter and press into the bottom of 4 serving jars.
- In a blender, combine avocados, cream cheese, powdered sugar, lime juice, lime zest, and vanilla until smooth.
- Spoon the avocado-lime filling over the crust in each jar, smoothing the top.
- In a small saucepan, combine granulated sugar and water; heat until sugar dissolves. Toss extra lime zest in the syrup, then drain and let dry on parchment paper until crystallized.
- Top each jar with crystallized lime zest and refrigerate for at least 2 hours before serving.
