For the Crust:

  • 4 slices whole grain bread
  • 2 ripe avocados
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons dried cranberries
  • 1/4 cup chopped walnuts
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Toast the bread slices until golden and crisp.
  2. In a bowl, mash the avocados with lemon juice, salt, and pepper.
  3. Spread the mashed avocado evenly over each toast.
  4. Top with cherry tomatoes, feta cheese, dried cranberries, and walnuts.
  5. Drizzle with olive oil and season with additional salt and pepper if desired.
  6. Serve immediately.
