Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
- In a medium bowl, whisk together flour and sugar. Add eggs, melted butter, lemon juice, lemon zest, milk, and vanilla extract. Mix until smooth.
- Divide batter evenly among muffin cups. Bake for 25–30 minutes, until golden and set. Let cool, then dust with powdered sugar before serving.
