For the Crust:
- 2 cups low-fat cottage cheese
- 2 large eggs
- 1/4 cup honey
- Zest of 1 lemon
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup mixed fresh berries (such as strawberries, blueberries, raspberries)
- Fresh mint leaves for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and lightly grease 6 ramekins or muffin cups.
- In a blender or food processor, combine cottage cheese, eggs, honey, lemon zest, vanilla extract, and salt. Blend until smooth.
- Pour the mixture evenly into the prepared ramekins, filling each about 3/4 full.
- Bake for 25-30 minutes, or until the tops are set and lightly golden.
- Remove from oven and let cool for 10 minutes. Top with fresh berries and garnish with mint if desired. Serve warm or chilled.
