For the Crust:
- 2 lbs baby potatoes, halved
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 8 oz block feta cheese
- 1 lemon, sliced
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, oregano, garlic powder, salt, and pepper. Spread in a baking dish.
- Place feta block in the center of the potatoes. Arrange lemon slices around the feta.
- Bake for 25-30 minutes until potatoes are tender and feta is soft and slightly golden.
- Garnish with fresh parsley before serving.
