For the Crust:
- 2 large ripe peaches, pitted and sliced
- 1 cup cottage cheese
- 2 tablespoons honey
- 1/2 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- 1/4 cup granola for topping
- Fresh mint leaves for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Arrange peach slices on a baking sheet lined with parchment paper.
- Drizzle peaches with half of the honey and sprinkle with cinnamon. Bake for 15-20 minutes, until tender and slightly caramelized.
- In a bowl, mix cottage cheese with vanilla extract and remaining honey. Divide among bowls, top with baked peaches, granola, and mint if using.
