Juicy, sweet, and high-protein breakfast bowls featuring baked peaches and creamy cottage cheese.

For the Crust:

  • 2 large ripe peaches, pitted and sliced
  • 1 cup cottage cheese
  • 2 tablespoons honey
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/4 cup granola for topping
  • Fresh mint leaves for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Arrange peach slices on a baking sheet lined with parchment paper.
  2. Drizzle peaches with half of the honey and sprinkle with cinnamon. Bake for 15-20 minutes, until tender and slightly caramelized.
  3. In a bowl, mix cottage cheese with vanilla extract and remaining honey. Divide among bowls, top with baked peaches, granola, and mint if using.
