For the Crust:
- 4 salmon fillets (6 oz each)
- 1 cup fresh cranberries, chopped
- 1/4 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1/2 cup pecans, toasted and chopped
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place salmon fillets on the baking sheet. Drizzle with olive oil and season with smoked paprika, salt, and black pepper. Bake for 12-15 minutes until cooked through.
- In a bowl, combine cranberries, red onion, cilantro, jalapeño, lime juice, and honey. Mix well and let sit for 10 minutes to allow flavors to meld.
- Toast pecans in a dry skillet over medium heat for 3-5 minutes until fragrant, then chop.
- Top baked salmon with cranberry salsa and sprinkle with toasted pecans before serving.
