For the Crust:
- 4 salmon fillets (6 oz each)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup fresh cranberries, finely chopped
- 1/4 cup red onion, finely diced
- 1 jalapeño, seeded and minced
- 2 tbsp fresh cilantro, chopped
- 1 tbsp lime juice
- 1 tsp honey
- 1/4 cup pecans, toasted and chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place salmon fillets on the baking sheet. Drizzle with olive oil and season with salt and pepper.
- Bake for 12-15 minutes, or until salmon flakes easily with a fork.
- While salmon bakes, combine cranberries, red onion, jalapeño, cilantro, lime juice, and honey in a bowl to make the salsa.
- Toast pecans in a dry skillet over medium heat for 3-5 minutes until fragrant, then chop.
- Top baked salmon with cranberry salsa and sprinkle with toasted pecans before serving.
