A festive and healthy baked salmon dish topped with a vibrant cranberry salsa and crunchy pecans, perfect for holiday dinners or a special weeknight meal.

For the Crust:

  • 4 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup fresh cranberries, finely chopped
  • 1/4 cup red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1/4 cup pecans, toasted and chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place salmon fillets on the baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Bake for 12-15 minutes, or until salmon flakes easily with a fork.
  4. While salmon bakes, combine cranberries, red onion, jalapeño, cilantro, lime juice, and honey in a bowl to make the salsa.
  5. Toast pecans in a dry skillet over medium heat for 3-5 minutes until fragrant, then chop.
  6. Top baked salmon with cranberry salsa and sprinkle with toasted pecans before serving.

You can customize the seasonings to taste.
