A high-protein, sweet, and comforting breakfast bowl featuring baked oatmeal with fresh strawberries and creamy cottage cheese.

For the Crust:

  • 2 cups rolled oats
  • 1 cup cottage cheese
  • 1 cup fresh strawberries, chopped
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup milk

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease four ramekins or a baking dish.
  2. In a large bowl, mix oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk eggs, cottage cheese, maple syrup, vanilla, and milk until smooth.
  4. Combine wet and dry ingredients, then fold in chopped strawberries.
  5. Divide mixture into ramekins and bake for 25-30 minutes until set and golden.
