For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup chopped walnuts
- 1/2 cup chopped pistachios
- 1/3 cup honey
- 1/2 tsp ground cinnamon
- 1/4 cup unsalted butter, for topping
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix graham cracker crumbs and melted butter, press into a 9-inch springform pan.
- Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing just until combined.
- Pour filling over crust. Bake for 45-50 minutes until center is set. Cool completely.
- Combine walnuts, pistachios, honey, cinnamon, and 1/4 cup butter in a skillet. Cook over medium heat until fragrant.
- Spread nut mixture over cooled cheesecake. Chill for at least 4 hours before serving.
