For the Crust:
- 1 cup fresh blueberries
- 1/4 cup balsamic glaze
- 8 oz goat cheese, softened
- 2 tbsp honey
- 1/4 cup chopped toasted pecans
- 1 tsp fresh thyme leaves
- Cracked black pepper to taste
- 24 small crackers or crostini
Instructions
1. Prepare the Crust:
- In a small bowl, gently toss blueberries with 2 tablespoons of balsamic glaze and set aside to marinate for 10 minutes.
- In another bowl, mix softened goat cheese, honey, and thyme until smooth and well combined.
- To assemble, spread a small amount of the goat cheese mixture onto each cracker. Top with a few marinated blueberries, a sprinkle of toasted pecans, a drizzle of remaining balsamic glaze, and a crack of black pepper.
- Arrange on a platter and serve immediately, or chill for up to 1 hour before serving for a firmer texture.
