For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 4 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1/4 cup chicken broth
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt, pepper, and oregano.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden and cooked through.
- Remove chicken from skillet and set aside. In the same skillet, add garlic and sauté for 1 minute until fragrant.
- Pour in balsamic vinegar and chicken broth, scraping up any browned bits. Simmer for 2-3 minutes until slightly thickened.
- Add spinach and tomatoes to the skillet, stirring until spinach wilts. Return chicken to the skillet and spoon the sauce over the top. Serve hot.
