For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 4 cups fresh spinach
- 1 cup cherry tomatoes, halved
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt, pepper, and oregano.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds. Add balsamic vinegar and stir, scraping up any browned bits.
- Add spinach and tomatoes to the skillet, cooking until spinach wilts and tomatoes soften, about 3-4 minutes.
- Return chicken to the skillet, spooning the spinach-tomato mixture over the top. Cook for another minute to reheat the chicken. Serve immediately.
