Tender chicken thighs simmered in a sweet and tangy balsamic fig glaze with caramelized onions and fresh thyme.

For the Crust:
- 8 bone-in, skin-on chicken thighs
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 1/2 cup balsamic vinegar
- 1/4 cup fig preserves
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
Instructions
1. Prepare the Crust:
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken, skin-side down, and cook until golden brown, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add onions and cook until softened and caramelized, about 8-10 minutes. Add garlic and thyme, cook for 1 minute until fragrant.
- Stir in balsamic vinegar, fig preserves, and chicken broth. Bring to a simmer.
- Return chicken to the skillet, skin-side up. Reduce heat to low, cover, and simmer for 20-25 minutes until chicken is cooked through.
- Uncover and simmer for 5 more minutes to thicken the sauce. Serve hot.
