For the Crust:
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 1/3 cup dried cranberries
- 1/3 cup walnuts, roughly chopped
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss Brussels sprouts with olive oil, salt, and pepper, then spread on a baking sheet.
- Roast for 20-25 minutes, until tender and edges are caramelized.
- Meanwhile, simmer balsamic vinegar and honey in a small saucepan until reduced to a syrupy glaze, about 5-7 minutes.
- Toss roasted Brussels sprouts with balsamic glaze, cranberries, and walnuts. Serve warm.
