Ingredients

Scale

For the Crust:

  • 1.5 lbs flank steak
  • 1/2 cup balsamic vinegar
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1/4 cup olive oil

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together balsamic vinegar, minced garlic, rosemary, olive oil, salt, and pepper.
  2. Place the flank steak in a resealable bag, pour the marinade over it, and refrigerate for at least 2 hours or overnight.
  3. Preheat the grill or broiler to medium-high heat.
  4. Remove steak from marinade, discard excess marinade, and grill for 5-7 minutes per side for medium-rare.
  5. Mix blue cheese, breadcrumbs, and Dijon mustard in a small bowl to form the crust.
  6. Spread the blue cheese mixture over the cooked steak and broil for 2-3 minutes until golden and bubbly.
  7. Let the steak rest for 5 minutes before slicing against the grain and serving.
