For the Crust:

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup vanilla wafer cookies, crushed
  • 1/2 cup sweetened condensed milk
  • 1/2 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Grease and flour a 10-inch bundt pan.
  2. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in mashed bananas and vanilla.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture alternately with buttermilk, beginning and ending with flour mixture.
  4. Fold in crushed vanilla wafers. Pour batter into prepared pan and bake for 60-70 minutes, or until a toothpick inserted comes out clean.
  5. Let cool in pan for 15 minutes, then invert onto a wire rack to cool completely.
  6. Whisk together sweetened condensed milk and heavy cream until smooth. Drizzle over cooled cake before serving.
