For the Crust:
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 3 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 cup vanilla wafer cookies, crushed
- 1/2 cup sweetened condensed milk
- 1/2 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Grease and flour a 10-inch bundt pan.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in mashed bananas and vanilla.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture alternately with buttermilk, beginning and ending with flour mixture.
- Fold in crushed vanilla wafers. Pour batter into prepared pan and bake for 60-70 minutes, or until a toothpick inserted comes out clean.
- Let cool in pan for 15 minutes, then invert onto a wire rack to cool completely.
- Whisk together sweetened condensed milk and heavy cream until smooth. Drizzle over cooled cake before serving.
