For the Crust:
- 1 lb ground beef
- 1 small onion, finely grated
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- Salt and black pepper to taste
- 1 cup hummus
- 2 medium tomatoes, diced
- 1 large cucumber, diced
- 1/4 cup red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Fresh mint leaves for garnish
Instructions
1. Prepare the Crust:
- In a large bowl, combine ground beef, grated onion, minced garlic, parsley, cumin, paprika, coriander, salt, and pepper. Mix until well combined.
- Shape the beef mixture into small oval or round patties (kefta).
- Heat a skillet over medium heat and cook the kefta for 4-5 minutes per side, until browned and cooked through.
- In a separate bowl, combine diced tomatoes, cucumber, red onion, olive oil, and lemon juice to make the salad. Toss gently.
- Spread hummus on a serving plate, top with the cooked kefta, and arrange the tomato cucumber salad around the edges.
- Garnish with fresh mint leaves and serve immediately.
