For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 cups elbow macaroni
  • 4 medium potatoes, cubed
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss cubed potatoes with olive oil, rosemary, thyme, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and crispy.
  2. Cook macaroni according to package instructions until al dente. Drain and set aside.
  3. In a skillet, melt butter over medium heat. Add garlic and cook for 1 minute. Add chicken breasts, season with salt and pepper, and cook for 6-7 minutes per side until browned and cooked through.
  4. Reduce heat to low. Pour heavy cream into the skillet with chicken, add cheddar cheese, and stir until creamy and melted. Simmer for 5 minutes.
  5. Combine cooked macaroni with the creamy sauce in the skillet, tossing to coat. Serve alongside roasted potatoes.
