For the Crust:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup crushed graham crackers
- 2 tbsp melted butter
- 1 tbsp brown sugar
- 6 small gingerbread star cookies
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line a muffin tin with 6 paper liners.
- Mix crushed graham crackers, melted butter, and brown sugar. Press into the bottom of each liner.
- Beat cream cheese and sugar until smooth. Add egg and vanilla, mix until combined.
- Spoon cheesecake filling over crusts. Bake for 20 minutes or until set.
- Let cool, then refrigerate for at least 2 hours. Top each with a gingerbread star before serving.
