Description

A hearty and flavorful one-pot dish featuring tender black beans simmered with aromatic vegetables and spices, served over fluffy rice.

For the Crust:

  • 1 cup dried black beans, soaked overnight
  • 1 cup long-grain white rice
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 4 cups vegetable broth
  • Salt and black pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

1. Prepare the Crust:

  1. Rinse the soaked black beans and drain. In a large pot, heat olive oil over medium heat.
  2. Add onion and bell pepper, sauté until softened, about 5 minutes. Stir in garlic, cumin, and smoked paprika; cook for 1 minute until fragrant.
  3. Add black beans, bay leaf, and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour until beans are tender.
  4. Stir in rice, cover, and simmer for an additional 20 minutes until rice is cooked and liquid is absorbed. Remove bay leaf.
  5. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.

Notes

You can customize the seasonings to taste.
