A protein-packed, gluten-free breakfast bake with creamy cottage cheese, sweet blueberries, and crunchy almonds, baked to golden perfection.

For the Crust:

  • 2 cups cottage cheese
  • 4 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup fresh or frozen blueberries
  • 1/2 cup sliced almonds
  • 1/4 teaspoon salt
  • Cooking spray or butter for greasing

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, whisk together cottage cheese, eggs, honey, vanilla extract, almond extract, and salt until smooth.
  3. Gently fold in blueberries and half of the sliced almonds.
  4. Pour mixture into the prepared baking dish and top with remaining almonds.
  5. Bake for 30-35 minutes, or until set and golden brown on top.
  6. Let cool for 5 minutes before slicing and serving warm.

Notes

You can customize the seasonings to taste.
