For the Crust:
- 1 cup almonds
- 1 cup dates, pitted
- 1/4 cup shredded coconut
- 1/4 cup chia seeds
- 2 cups fresh blueberries
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup coconut milk
Instructions
1. Prepare the Crust:
- Blend almonds, dates, and coconut in a food processor until crumbly. Press into a pie dish to form the crust.
- In a saucepan, combine blueberries, maple syrup, and vanilla. Simmer for 5 minutes until berries burst. Stir in chia seeds and coconut milk, then cook for another 5 minutes until thickened.
- Pour the blueberry chia mixture over the crust. Refrigerate for at least 4 hours or until set. Garnish with extra blueberries before serving.
