Description

A refreshing and nutritious salad combining sweet blueberries with crisp broccoli and tender spinach, all tossed in a tangy vinaigrette.

For the Crust:

  • 4 cups fresh spinach
  • 2 cups broccoli florets, chopped
  • 1 cup fresh blueberries
  • 1/4 cup sliced almonds
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine spinach, broccoli, blueberries, almonds, and feta cheese.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  4. Serve immediately or chill for 10 minutes to let flavors meld.
