A vibrant and nutritious salad combining sweet blueberries with fresh broccoli and spinach, tossed in a tangy vinaigrette.

For the Crust:

  • 4 cups fresh spinach
  • 2 cups broccoli florets, chopped
  • 1 cup fresh blueberries
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup sliced almonds
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine spinach, broccoli, blueberries, red onion, feta cheese, and sliced almonds.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  4. Serve immediately or refrigerate for up to 30 minutes to let flavors meld.
