For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh or frozen corn kernels
  • 1 cup fresh blueberries
  • 4 cups mixed greens
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with salt and pepper, then grill over medium heat until fully cooked, about 6-7 minutes per side. Let rest before slicing.
  2. In a large bowl, combine mixed greens, corn, blueberries, red onion, and feta cheese.
  3. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper to make the dressing.
  4. Add sliced chicken to the salad, drizzle with dressing, and toss gently to combine. Serve immediately.
