Description

This blueberry cottage cheese breakfast bake is a high-protein, low-carb dish perfect for make-ahead mornings or family brunch.


Ingredients

Scale

1½ cups cottage cheese

3 large eggs

1 cup blueberries (fresh or frozen)

½ cup almond flour (optional)

1 tbsp maple syrup or sweetener of choice

1 tsp vanilla extract

¼ tsp cinnamon

Butter or coconut oil for greasing


Instructions

1. Preheat oven to 350°F (175°C) and grease an 8×8 baking dish.

2. In a bowl, whisk together cottage cheese, eggs, vanilla, cinnamon, and sweetener.

3. Stir in almond flour if using.

4. Fold in the blueberries gently.

5. Pour the mixture into the baking dish and smooth out.

6. Top with a few extra blueberries if desired.

7. Bake for 35–40 minutes or until golden and set.

8. Cool 10 minutes before slicing and serving.

Notes

Can be stored in the fridge for up to 4 days.

Enjoy cold or reheat slices.
