Description

A quick and healthy stir-fry featuring tender bok choy and earthy mushrooms in a savory garlic-soy sauce.


Ingredients

For the Crust:

  • 1 lb baby bok choy, halved lengthwise
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • 1/4 cup vegetable broth
  • 1 tsp cornstarch
  • 2 green onions, sliced

Instructions

1. Prepare the Crust:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add garlic and ginger, stir for 30 seconds until fragrant.
  3. Add mushrooms and stir-fry for 4-5 minutes until browned.
  4. Add bok choy and vegetable broth, cover and steam for 3-4 minutes until tender.
  5. In a small bowl, mix soy sauce, oyster sauce, sesame oil, and cornstarch.
  6. Pour sauce over vegetables, stir until thickened, about 1-2 minutes.
  7. Garnish with green onions and serve hot.

Notes

You can customize the seasonings to taste.
