A quick and healthy stir-fry featuring tender bok choy and earthy mushrooms in a savory garlic-soy sauce.

For the Crust:
- 1 lb baby bok choy, halved lengthwise
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 1/4 cup vegetable broth
- 1 tsp cornstarch
- 2 green onions, sliced
Instructions
1. Prepare the Crust:
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add garlic and ginger, stir for 30 seconds until fragrant.
- Add mushrooms and stir-fry for 4-5 minutes until browned.
- Add bok choy and vegetable broth, cover and steam for 3-4 minutes until tender.
- In a small bowl, mix soy sauce, oyster sauce, sesame oil, and cornstarch.
- Pour sauce over vegetables, stir until thickened, about 1-2 minutes.
- Garnish with green onions and serve hot.
