For the Crust:

  • 2 large eggs
  • 1 cup cooked quinoa
  • 1/2 avocado, sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh herbs (such as parsley or chives) for garnish

Instructions

1. Prepare the Crust:

  1. Cook quinoa according to package instructions and let cool slightly.
  2. In a bowl, assemble the quinoa, avocado slices, cherry tomatoes, cucumber, and feta cheese.
  3. Heat olive oil in a non-stick skillet over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  4. Carefully place the fried eggs on top of the assembled bowl.
  5. Season with salt and black pepper, then garnish with fresh herbs.
  6. Serve immediately, encouraging diners to break the egg yolks and mix them into the bowl to create a creamy sauce.
