For the Crust:
- 4 boneless, skinless chicken breasts
- 4 oz brie cheese, sliced
- 1 medium apple, thinly sliced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup chicken broth
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Place chicken breasts between plastic wrap and pound to 1/4-inch thickness.
- Season chicken with thyme, garlic powder, salt, and pepper.
- Layer brie and apple slices on each chicken breast, then roll tightly and secure with toothpicks.
- Heat olive oil in an oven-safe skillet over medium-high heat, sear chicken rolls until golden on all sides.
- Pour chicken broth into skillet, transfer to oven, and bake for 20-25 minutes until chicken is cooked through.
- Let rest for 5 minutes before slicing and serving.
