A gourmet twist on the classic grilled cheese, featuring creamy brie and sweet blackberry jam between buttery, golden bread.

For the Crust:
- 8 slices sourdough bread
- 8 oz brie cheese, sliced
- 1/2 cup blackberry jam
- 4 tbsp unsalted butter, softened
- 1 tbsp fresh thyme leaves
Instructions
1. Prepare the Crust:
- Spread blackberry jam evenly on one side of each slice of bread.
- Layer brie slices and sprinkle with fresh thyme on the jam-covered side of 4 bread slices, then top with remaining bread slices, jam side in.
- Butter the outer sides of each sandwich generously.
- Heat a skillet over medium heat. Cook each sandwich for 3-4 minutes per side, until golden brown and cheese is melted.
- Remove from heat, let cool slightly, then slice and serve warm.
