For the Crust:
- 8 slices sourdough bread
- 8 oz brie cheese, sliced
- 1/2 cup blackberry jam
- 4 tbsp unsalted butter, softened
- 1 tbsp fresh thyme leaves (optional)
Instructions
1. Prepare the Crust:
- Spread one side of each bread slice with softened butter.
- Flip bread slices over and spread blackberry jam on the unbuttered side of 4 slices.
- Top the jam-covered slices with brie cheese and sprinkle with fresh thyme if using.
- Place the remaining bread slices on top, buttered side facing out.
- Heat a skillet over medium heat and cook sandwiches for 3-4 minutes per side, until golden brown and cheese is melted.
- Remove from skillet, let cool slightly, then slice and serve warm.

You can customize the seasonings to taste.
