For the Crust:
- 1 large soft flatbread or lavash wrap
- 8 oz brie cheese, rind removed and sliced
- 1/2 cup cranberry sauce (whole berry or jellied)
- 1/4 cup chopped walnuts or pecans
- 2 tbsp fresh rosemary, finely chopped
- 1 tbsp olive oil
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Lay the flatbread on a clean surface. Spread cranberry sauce evenly over the surface, leaving a 1-inch border at the top edge.
- Arrange brie slices over the cranberry sauce, then sprinkle with nuts, rosemary, salt, and pepper.
- Starting from the bottom edge, tightly roll the flatbread into a log. Brush the outside lightly with olive oil.
- Slice the log into 1-inch thick pinwheels and place them cut-side up on the baking sheet.
- Bake for 12-15 minutes, until the cheese is melted and the edges are golden. Serve warm.
