These elegant pinwheels feature creamy brie and sweet-tart cranberry sauce rolled in soft flatbread, then baked until golden and melty—perfect for holiday gatherings or appetizers.

For the Crust:

  • 1 large soft flatbread or lavash wrap
  • 8 oz brie cheese, rind removed and sliced
  • 1/2 cup cranberry sauce (whole berry or jellied)
  • 1/4 cup chopped walnuts or pecans
  • 2 tbsp fresh rosemary, finely chopped
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Lay the flatbread on a clean surface. Spread cranberry sauce evenly over the surface, leaving a 1-inch border at the top edge.
  3. Arrange brie slices over the cranberry sauce, then sprinkle with nuts, rosemary, salt, and pepper.
  4. Starting from the bottom edge, tightly roll the flatbread into a log. Brush the outside lightly with olive oil.
  5. Slice the log into 1-inch thick pinwheels and place them cut-side up on the baking sheet.
  6. Bake for 12-15 minutes, until the cheese is melted and the edges are golden. Serve warm.
