A festive and easy appetizer featuring creamy brie, tangy cranberry sauce, and fresh herbs rolled in soft flatbread, sliced into elegant pinwheels.

For the Crust:
- 1 large soft flatbread or tortilla wrap
- 4 oz brie cheese, thinly sliced or spreadable
- 1/4 cup cranberry sauce (whole berry or jellied)
- 1/4 cup fresh arugula or spinach
- 2 tbsp chopped walnuts or pecans (optional)
- 1 tsp fresh thyme or rosemary, chopped
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Lay the flatbread on a clean surface and spread an even layer of brie cheese over it, leaving a small border around the edges.
- Spoon cranberry sauce over the brie, then top with arugula, nuts (if using), herbs, salt, and pepper.
- Tightly roll the flatbread into a log, starting from one edge. Wrap in plastic wrap and refrigerate for 15 minutes to firm up.
- Remove from fridge, unwrap, and use a sharp knife to slice into 1-inch thick pinwheels. Serve immediately or chill until ready to eat.
