A warm, savory-sweet appetizer featuring a whole roasted pumpkin filled with creamy brie and a rich maple pumpkin butter.

For the Crust:
- 1 small sugar pumpkin (about 3–4 lbs)
- 8 oz brie cheese, rind removed and cubed
- 1/4 cup pure maple syrup
- 2 tbsp unsalted butter, melted
- 1 tsp pumpkin pie spice
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 tbsp chopped pecans for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Cut off the top of the pumpkin and scoop out seeds and strings.
- In a bowl, mix maple syrup, melted butter, pumpkin pie spice, salt, and pepper. Brush the inside of the pumpkin with half of this mixture.
- Place cubed brie inside the pumpkin. Pour the remaining maple mixture over the brie.
- Replace the pumpkin lid and place on a baking sheet. Roast for 45-50 minutes, or until pumpkin is tender.
- Remove from oven, sprinkle with chopped pecans, and let cool for 5 minutes before serving.
