Description

Elegant, savory-sweet roasted butternut squash slices rolled with creamy brie and herbs, resembling edible roses. Perfect as a festive side dish or appetizer.

For the Crust:

  • 1 medium butternut squash, peeled and thinly sliced lengthwise
  • 4 oz brie cheese, rind removed and sliced thinly
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme leaves
  • 1 tbsp maple syrup
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • Fresh rosemary sprigs for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss butternut squash slices with olive oil, maple syrup, garlic powder, salt, and pepper until evenly coated.
  3. Arrange slices on the baking sheet and roast for 15-20 minutes until tender but still pliable.
  4. Remove from oven and let cool slightly. Place a slice of brie and a sprinkle of thyme on each squash slice, then roll tightly from one end to form a rose shape.
  5. Place rolls upright in a baking dish, drizzle with any remaining oil, and bake for another 10 minutes until brie is melted.
  6. Garnish with fresh rosemary and serve warm.
