For the Crust:
- 1 medium butternut squash, peeled and thinly sliced lengthwise
- 4 oz brie cheese, rind removed and sliced thinly
- 2 tbsp olive oil
- 1 tbsp fresh thyme leaves
- 1 tbsp maple syrup
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Fresh rosemary sprigs for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, toss butternut squash slices with olive oil, maple syrup, garlic powder, salt, and pepper until evenly coated.
- Arrange slices on the baking sheet and roast for 15-20 minutes until tender but still pliable.
- Remove from oven and let cool slightly. Place a slice of brie and a sprinkle of thyme on each squash slice, then roll tightly from one end to form a rose shape.
- Place rolls upright in a baking dish, drizzle with any remaining oil, and bake for another 10 minutes until brie is melted.
- Garnish with fresh rosemary and serve warm.
