For the Crust:
- 1 large sweet potato, peeled and cubed
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 4 large flour tortillas
- 8 ounces brie cheese, sliced
- 1/2 cup cranberry sauce
- 1/4 cup hot honey
- 2 cups arugula
- 1/4 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper. Roast for 20-25 minutes until tender and slightly caramelized.
- Lay out tortillas. On each, layer arugula, roasted sweet potatoes, brie slices, cranberry sauce, and chopped pecans.
- Drizzle hot honey over the fillings. Fold the sides of each tortilla inward, then roll tightly from the bottom to form a wrap.
- Heat a skillet over medium heat. Place wraps seam-side down and cook for 2-3 minutes per side until golden and crispy. Serve warm.
