For the Crust:
- 2 large potatoes, peeled and grated
- 1 cup broccoli florets, finely chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup breadcrumbs
- 1 egg, beaten
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine grated potatoes, chopped broccoli, cheddar cheese, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Scoop tablespoon-sized portions of the mixture, shape into small patties, and place on the prepared baking sheet. Brush lightly with olive oil.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy. Serve warm.
