Description

Crispy potato bites filled with tender broccoli florets, seasoned to perfection and baked until golden.


Ingredients

For the Crust:

  • 2 large potatoes, peeled and grated
  • 1 cup broccoli florets, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine grated potatoes, chopped broccoli, cheddar cheese, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Scoop tablespoon-sized portions of the mixture, shape into small patties, and place on the prepared baking sheet. Brush lightly with olive oil.
  4. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy. Serve warm.

Notes

You can customize the seasonings to taste.
